2nd place winner of Thundrcutz 9 week challenge here are before and after pics: Fitness has been a continually evolving journey for me. I started lifting weights as a junior in high school and never stopped. My relationship with fitness has grown from an unhealthy addiction that caused two knee reconstructive surgeries and ripped up shoulders/elbows/wrists to being afraid to lift.. to learning more sustainable forms of exercise and self care. Through it all the most important practice has been diet and meal prep. I've learned over and over truly the hardest work is done in the kitchen and building a healthy relationship with food. At the beginning of 2020 @tdollarsignc and I embarked on a 9 week journey with @thundrbro doing a thundrcutz challenge. The meal prepping was tedious and the workouts forced me to find modifications to work around my injuries but I feel stronger and had a great time working out with my P.I.C every day. Good morning friends!! I hope you all had a fabulous weekend even though all the days are sort of running together now! With that being said, I finally made myself useful and have another recipe! 🙂 I made this pecan cinnamon streusel over the weekend and it is a 10/10! I hope you all enjoy! VEGAN GLUTEN FREE PECAN CINNAMON STREUSEL: CAKE INGREDIENTS: - 1 cup oat flour - 1/2 cup almond flour - 2 tablespoons cornstarch - 1/3 cup coconut sugar - 1/4 tsp baking soda - 1 tsp baking powder - 1 1/2 tsp cinnamon - Pinch of salt - 3/4 cup almond milk - 2/3 cup apple sauce - 2 tablespoons coconut oil (melted ) - 1 tablespoons apple cider vinegar - 1 tsp vanilla extract STREUSEL TOPPING: - 1 cup almond flour - 1/4 cup coconut sugar - 2 tablespoons maple syrup - 2 tablespoons coconut oil (melted ) - 2 tsp cinnamon Preheat the oven to 350F and line a baking dish. Start my making your streusel topping and set aside in a bowl. In a separate large mixing bowl, mix your dry ingredients, and then add your wet until everything is well incorporated. Poor your batter into you dish and top with your streusel mixture. Bake for 35-40 minutes!
