Well then say hello to these Baked Banana Chocolate Oatmeal Cups👋🏼These babies can be whipped up in 30 mins and use basic ingredients you will already have at home🍌🍫 • details: mix 4 cups rolled oats, 2 large mashed bananas, 2+1/3 cup almond milk, 1/4 cup coconut sugar or brown sugar, 1/3 cup maple syrup, 1/2 cup nut butter, 2 tsp vanilla extract, 2 tsp cinnamon, 1 tsp baking powder, and 1/2 tsp salt in a bowl until well incorporated. Then fold in 1/2 cup mini chocolate chips and divide into a greased muffin tray. Bake for 20 mins at 375F or until cooked through✨

This was my little impulse project yesterday! I had pumpkin puree, coconut milk and a graham cracker crust already, so made a no-shopping-neccessary vegan pumpkin pie! Not to toot my own gown, but I think it is the best I have ever had! I didn't have any brown sugar, so I used maple sugar and I think that set it off! Filling: 1 can - 15oz pumpkin puree 1/4 cup maple sugar 1/4 cup sugar 3/4 cup full-fat coconut milk 1/4 cup corn starch 2.5 tsp pumpkin pie spice 1 tsp vanilla extract sprinkle of sea salt Basically, preheat oven at 350°, mix filling ingredients (I wisked by hand ). Pour in and bake for 50 minutes (middle just set ). I decided to top with @mydandies marshmallows and put under the broiler for a minute to brown. 🔥🔥🔥

I’m loving the sun, the stillness, the quiet 🙏 Here are some beautifully simple feijoa muffins, sweetened with coconut sugar and topped with coconut chips. 💯 plant-based. ⠀⠀ Best with a chamomile / lemon balm / passionflower tea to keep the nerves calm. ⠀⠀ Dry: 1/2 cup oat flour 1/2 cup almond meal fine, white 1/2 cup white rice flour 1/2 cup coconut threads 1/3 cup coconut sugar 1 teaspoon ginger powder 1 teaspoon baking soda 1/4 teaspoon coarse sea salt ⠀⠀ Wet: 1 cup coconut milk canned – full fat 4 medium sized feijoas net weight of peeled fruit - 200g Coconut chips to sprinkle ⠀⠀ Set the oven to 180˚C, fan bake Cut feijoas in half, scoop out the flesh, roughly chop - small-ish pieces, not a purée Transfer all dry ingredients to a bowl and mix to combine Pour coconut milk over the dry ingredients, mix together Add feijoas, fold through, don’t over mix Spoon batter into muffin tray cavities, three quarters full. My favourite quick and easy jackfruit curry with mushrooms! If you love curry and healthy comfort food try this one out for dinner 😍 jackfruit is so much fun to cook with and tastes incredible in curries, stews, soups, etc. What’s your favourite way to use it? Simple jackfruit curry with mushrooms 1 medium onion, chopped 2 cloves garlic, minced 1 tsp smoked paprika 1 tsp cumin 1 tsp garam masala 1.5 cups mushrooms, chopped 1 can jackfruit, drained and rinsed 1/2 can coconut milk 1/2 can tinned tomatoes 1 tbsp vegan curry paste (or curry powder ) Salt and pepper, to taste Add the onion, garlic, smoked paprika, cumin and garam masala to a non-stick saucepan with a splash of water. Sauté for 2-3 minutes, until softened and fragrant. Then, add the mushrooms and sauté for around 3 minutes more, until they begin to cook down. Meanwhile, pull apart the jackfruit pieces using your hands or a fork. Transfer the jackfruit to the saucepan and add the coconut milk, tomatoes, and curry paste. Simmer over a medium heat for 8-10 minutes, until thick and creamy. Today’s mood = pasta (and pretty much any other day tbh lol ). Today, I’m serving up this super creamy secret ingredient fusilli, with the secret ingredient being butter beans, which are pretty underrated as a creamy/thick sauce ingredient, but that’s probably my favourite way of using them! Check out the recipe below if you want to give it a go yourself ⬇️ sending you all lots of love 💚 Creamy butter bean fusilli 7 oz (200g ) fusilli 1 medium onion, chopped 1 medium carrot, peeled and chopped 1 can butter beans, drained and rinsed 2 cloves garlic 1/4 cup nutritional yeast 1/2 tsp salt 1/2 tsp cumin 1/2 tsp turmeric 1/2 cup plant based milk Cook the fusilli until al dente - this usually takes around 8-10 minutes. Add the onion and the carrot to a non-stick frying pan with either a splash of water or a drizzle of olive oil. Sauté for 3-4 minutes to soften, then add the butter beans and sauté for 2 minutes more. Transfer to a blender or food processor and add the garlic, nutritional yeast, salt, cumin, turmeric and plant based milk. Blend until smooth. Drain and rinse the fusilli, then combine with the sauce. Serve either hot, or leave to chill in the fridge for 15 minutes to have it cold. This lasts in the fridge for 3-4 days in an airtight container. The sauce should be very thick and creamy, but if you want to thin it out a little bit more, add extra plant based milk. Matcha💚Magic: Spring Tart🥮 By @joyfulhomecooking . Ingredients: Crust • 16 dates, pitted • 2cups GF rolled oat • 1 cup almond flour • 4 tbsp. cacao powder • 2 tbsp. coconut oil Filling: • 2 cups cashew, soaked • 1/2 cup pure maple syrup • ¼ cup coconut oil • 1/2 cup full fat coconut milk • 1 tbsp matcha powder Method 1. Take an 8” tart tin with a removable bottom and grease it with coconut oil. 2. Chuck all the crust ingredients in a food processor. Then pulse them until the mixture feels like wet sand. 3. Press the crust firmly into the bottom and sides of the greased tart tin. Pop it in the freezer to set. 4. Add all of the filling ingredients in the food processor. Blend for 2 mins, or until the mixture is silky smooth and creamy. 5. Scrape down the sides if required. You can add some more coconut milk if your mousse filling isn’t smooth. 6. Once done, pour the mousse onto the crust. Spread it with the back of a spoon and smooth out the top. 7. Tap the pan against the counter to release air bubbles. (3x ) 8. Pop it in the fridge to set. (3 hrs or until completely firm ) . Voila💁🏻‍♀️! Your decadent dessert is ready to be sliced and served. . Each slice of this heavenly treat is enough to uplift your mood💪🏼.

Washing produce has been a subject of discussion in my direct messages so I wanted to talk about that here! There may be a better way but what we have been doing is: 1 ) As soon as food enters the house, we put it all in the sink minus any bags. You could certainly wash bags of apples etc if you want them to remain in the bags, but we like to take them out. We would do this for the romaine hearts we buy so we aren’t washing 24 heads of romaine in a day! 2 ) In a big silver bowl we fill with water, any hard surfaced fruit or veg, a little Dr Bronners soap and get washing and rinsing. Get a cloth like the Norwex Fruit n’ Veg cloth to wash harder produce with (lemons, avocados, bell peppers, etc ). My friend @a_vegan_ray_of_sunshine sells them, you can find a link in her bio. The silver infused clothes trap proteins SMALLER than the virus so they are a great protection tool at any time especially now.
