🍎 Almond flour apple muffins. Great as a snack or for breakfast. 👩🏻‍🍳 Ingredients: 1 cup of almond flour 1 cup of coconut or oat flour ¾ cup of your sweetener of choice (monk fruit, coconut sugar, etc. ) 1 tsp of cinnamon 2 tsp of baking powder 2 eggs ½ cup of chopped almonds or walnuts 2 diced apples ½ cup of apple sauce (unsweetened ), kefir, or yogurt ¼ cup of coconut oil 👩🏻‍🍳 Preparation: Mix the eggs, oil, and apple sauce / kefir / yogurt. Mix all the dry ingredients in a separate bowl and add them to the egg batter. Add the apples and nuts and mix well. oats again 🤪 I’m working lots at the minute so I don’t have as much time to make presentable meals, so bear with me over the next couple days as I work through my drafts 😅 - BOWL DEETZ: @quakeroatsuk rolled oats, @usnuk vanilla maple vegan protein, @misfitshealth vanilla vegan protein, banana, dried fig, golden flaxseed and almonds cooked and left over night (makes them soooo thick! ) topped with clementine, grapes, @sweetfreedomuk choc shot sauce, @meridianfoods cashew butter and this snazzy new vegan yoghurt by @activiauk which was prune flavoured and had flaxseeds in it. Very good! Very caramel-like for a yoghurt 🤪 was cool to try something different ✨ - happy Monday! New week again (even though I’m working I lose track of days at the minute 😅 ) and I’m working 3 looooong shifts Monday-Wednesday. The only good thing is looking forward to my 4 days off after; you best believe I’m adventuring to the field near my house every day to get sunshine every day. That’s my treat for working 😂☀️((don’t worry it’s very quiet and only has the odd dog walker ) ) does anyone else’s Snapchat memories make them sentimental at the minute? WORKING FROM HOME TIPS! 🤓✨ . . . It’s full on exam revision time for me now as I’ve got 4 weeks to go until 8 bigggg exams come at me! AAAA 🥴. So I thought I’d share some working/studying from home tips for how I plan to be as productive as I can, but also stay sane during lockdown 🌞 ————— 📚 Set a timetable - just because you’re home all the time now is not an excuse to over-work, it’s not good for the quality of your work OR you! 📚 Set up a proper workspace and get out of those jammies early on! 📚 Get in at least some movement throughout the day - a walk, a run, whatever (but only one! #stayhome ) 📚 Keep to meal times and if you need it, have a snack on hand for in between. Your brain needs the fuel and your energy levels will thank you for it 📚 With that, make sure your main meals are made up of protein, carbs and healthy fats. You need all 3 📚 Take regular breaks - I’m going to take an hour for breakfast and lunch, and stop work by dinner time, if you’re efficient in the day that should be plenty! 📚 And most importantly, if you don’t have a productive day - MOVE ON and start again tomorrow. Not every day will be perfect, and that is OKAY. Stressing will only make things worse ♥️ ————— I hope that might help a little! Even though it’s a weird time now, I know for many of us exams/essays/work are going on as usual. My motivation is certainly coming in waves atm, so learning to adjust & adapt is key too 🥰 HAVE A FAB DAY TEAM 💜
